Ingredient
3 stalks lemongrass
a handful of bird's eye pepper
2 potatoes
1 teaspoon turmeric
2 teaspoon salt
1 can coconut milk
Cooking Instructions
- Blend up pepper finely and pound lemongrass bottom a bit to let flavour out.
- Add a tablespoon of oil into deep pan.
- Add chicken and cook it at low fire to sweat the chicken
- Add coconut milk, lemongrass, pepper, turmeric and salt into the pan. Stir it a little to mix them up and let it cook for 5 minutes.
- Peel off potatoes and cut into large bite sizes. Add potatoes into the pan.
- Close the lid and let it simmer for 15 minutes. You may cook it longer to get a richer and creamier texture.
- Chicken in Spicy Curry DONE!
