Kuah Kacang Sate Haji Samuri |
Haji Samuri is the owner of popular Malaysian satay joint, Sate Kajang and prepares a variety type of satay in his menu. Aside from their succulent and great grilled meat, they also serve good peanut sauce to go along with their satay. Here we share a copycat recipe for their peanut sauce
Ingredients
½ kg ground peanut (fried without oil and crushed coarsely)
2 packet palm sugar
2 tablespoon tamarind paste (dissolve in water)
5 dried chilli (soak or heat in boiling water to soften)
5 dried chilli (soak or heat in boiling water to soften)
7 shallots
4 garlic cloves
2 stalk of lemongrass
1 inch ginger
Cooking Instructions
- Slice shallots, garlic, lemongrasses and ginger finely. Fry for a few minutes and then blend finely along with dried chilli
- In a pot, add the blended ingredients along with tamarind juice and peanuts. Mix them well
- Cook until it is boiling before adding palm sugar, salt and sugar. Mix well and wait until it boils again
- Once boiling, cover the pot and reduce heat to low. Cook until you can see oil starts to gather on top of the sauce. Make sure you stir the sauce once in a while to avoid burning
- You may adjust the sauce thickness to your liking by adding some water
- Serve the sweet peanut sauce along satay, rice cubes, cucumber and raw onions (cut into bite sizes)
