Kari Ayam Mamak (Chicken Curry Mamak's Style)

Mamak's Chicken Curry usually served with roti canai/roti paratha and capati as well as part of Nasi Kandar dish choices. Here we share how to make one at home yourself.


Ingredients

1/2 whole chicken (diced)
2 potatoes (slice 4)
2 tomato (slice 4)
2 stalks curry leaves
1/2 red onion (finely slice)
1 red onion
1 clove of garlic
1/2 inch of ginger
2 green chillies or capsicum
5 peeled almonds nut (no skin)
2 tablespoon meat curry powder
1/2 teaspoon cumin powder
1/2 teaspoon fennel powder
1 teaspoon chilli powder
1 teaspoon garam masala
1/2 liter water
1/2 box coconut milk
2 tablespoon oil
Salt

Cooking Instruction

  • Blend 1 onion, 1 tomato, garlic, ginger, chillies and almonds with some water
  • Combine curry powder, cumin powder, fennel powder and chilli powder in a bowl and add 1/4 cup of water to make a paste
  • Heat oil and saute onion with curry leaves until fragrant
  • Add blended ingredients and saute until it dries and become yellow
  • Add spices paste and cook until fragrant before adding chicken. Stir the chicken so that it well coated with spices
  • Now add water and potatoes and cook until potatoes is cooked
  • Season it well with salt before adding coconut milk and tomato. Use low heat and cook until coconut milk is cooked.
  • Add garam masala and cook for another 3 minutes before turning off the heat
  • Chicken Curry Mamak's Style DONE
