Ingredients
5 pieces chicken drumstick6 shallots or 1 onion
2 cloves of garlic
2 tablespoon ground turmeric
1 teaspoon ground coriander
1 teaspoon ground aniseed
1 teaspoon ground cumin
3 stalks of lemongrass
1 tablespoon sweet soy sauce
2 tablespoon dried red chili paste
20 curry leaves
3 kaffir lime leaves
1 dried tamarind
1 teaspoon salt
1 tablespoon sugar
Cooking Instructions
Blend shallot, garlic, dried red chili paste, 2 stalks of lemongrass, ground coriander powder, ground aniseed and ground cumin,Mix blended ingredients with ground turmeric and dark soy sauce. Marinade chicken drumstick with it.
Heat oil in a pan and add marinated chicken. Do not toss or put in the marinade mixture yet.
When the chicken starts to become hard, add remaining marinade mixture as well as curry leaves, kaffir lime leaves, lemongrass and tamarind.
Stir the chicken and let it further cook before adding 1/2 cup of water.
Add salt and sugar. Mix well and cook until the gravy thickness is to your liking.
