Rendang is popular Malay dish in Indonesia and Malaysia. It is rich with flavour from slowly simmering beef with coconut milk and spices. It is a favorite dish, usually served during festive season but nowadays we can find this dish throughout the year at local restaurants. This dish is so famous that there are a variety of rendang in Malaysia that differs from one region to another. Here is a recipe to make simple rendang dish from Negeri Sembilan.

Ingredients

1kg beef
20 bird's eye chili
10 dried red pepper
250ml coconut milk
8 stalks lemongrass
1 inch galangal
1 inch whole turmeric
3 teaspoon salt
1 teaspoon sugar



Instructions

Add dried red pepper into boiling water and let it simmer until it become soft
Slice beef thinly into mouth size pieces
Add bird's eye chili, dried red pepper, lemon grass, galangal and turmeric into blender and blend them into paste
In a pan, heat about two tablespoons of oil and add the paste. Saute until you can see the paste getting darker and smell nice smell from the blend.
Add beef slices into the pan along with coconut milk, salt and sugar.
Stir to mix it up and leave it until liquid gone. This process will take a lot of time and stir once in a while to avoid burnt.
The dish is complete when the beef is tender and no liquid remains.
