Have you ever wonder how many Thai's restaurant make a fluffy fried omelette? The secret is hot oil and how quick you handle the egg. 

The main feature of Thai's style omelette is its bubbly texture and crispiness but it is hard to make one without using a wok and decent amount of cooking oil. 

When you are frying the omelette you need to make sure the oil is really hot to the point it starts to smoke before dumping egg mixture. Then you have to quickly spread out the mixture before it became solid.

Telur Dadar Thai is a great dish to complement Tom Yam and Ayam Paprik to be served along white rice if you wish to enjoy a hearty Thai's meal set.

Ingredients

2 eggs
1/2 teaspoon sugar

1/4 teaspoon salt

Instructions

Mix all ingredients in a bowl and beat vigorously using fork.
Heat the pan and add oil enough to cover the pan's base.
Once the pan is hot, pour the egg mixture into it. Using fork, quickly spread egg mixture on center towards outer side to even out the omelette
Let it cook until you see the egg solid enough to flip
Use two spatula to flip the egg over and cook for until the other side also become crispy before serving.
