Nasi Goreng Kampung |
Nasi Goreng Kampung is a spicy fried rice made with bird's eyed chili and anchovies paste. It is a popular Malay-style fried rice dish which Kampung refers to hometown or Malay's origin. It is spicy, savory and the crispy fried anchovies give crunchy texture in every bite. It is usually served for breakfast and dinner as it is considered light meal for Malaysian eating culture.
Ingredients
2 cups cooked cold rice15 bird's eye chili
5 shallots or 1 large red onion
50g dried fine anchovies
1 stalks of kangkung
1 egg
1 teaspoon salt
1 teaspoon turmeric powder
few slices of cucumber
cooking oil
Instructions
Rinse dried fine anchovies with water to clean it up (three times would be perfect)Cut kangkung into 3 inch long
Add shallots/onion and bird's eye chili into blender. Blend finely into paste and add turmeric powder. If you need liquid, add some oil as well (you will have to reduce oil when cooking.
Now add the other half of anchovies into blender and blend it roughly. Do not blend it fine as you want texture of the fish in rice later.
Heat 1/2 cup of cooking oil in wok/pan. Take half of the anchovies and fry until crispy
Use new oil for cooking rice. Heat 2 tablespoon of cooking oil on low heat.
Add the blends into pan and cook until fragrance.
Turn heat into high and add rice. Stir it frequently to avoid burning the rice until all rice covered with paste.
Make a well at center and break an egg. Wait until the egg solidify and mix with rice
Lastly, add kangkung and cook for a few more minute to soften it.
Serve with cucumber and fried anchovies. You may also want to fry an egg to complete a hearty meal.
