Cakoi (Deep Fried Dough)


Cakoi
A deep fried dough inspired from China's Youtiao is another popular street snack in Malaysia. Unlike Chinese who enjoy this snack with rice porridge for breakfast, Malaysian eat this as tea time snack and served with sweet chili sauce or curry. Some hawkers would serve this in bite size pieces in a cup with dripping sauce.


Ingredients

1 kg wheat flour
1 packet dried yeast
1 cup sugar
3½ cup water
A pinch of salt
2 eggs (beaten well)
½ cup Mazola oil
1 teaspoon soda bicarbonate
1 teaspoon lime water

Cooking Instructions

  1. Combine yeast, sugar, water and salt in a bowl and let it sit for 10 minutes
  2. Combine flour, Mazola oil, eggs and yeast mixture from before into a larger bowl
  3. Add water and knead until smooth and not stick to hands
  4. Cover the bowl with damp cloth and let it sit for overnight
  5. Knead again until soft and smooth
  6. Take a handful of dough and flatten it
  7. Cut the dough in vertical pattern
  8. Dip wooden skewer in water and wet the middle part of dough that was cut before
  9. Cut another piece of dough to same size and stick it together with the dough before. Put some pressure to the wet middle dough
  10. Repeat the process with remaining dough
  11. In a fryer, heat oil to medium heat and fry until golden brown
  12. Cakoi DONE!
